Biography

I have always had a connection with food. From growing up on a commercial vegetable farm in Minnesota, to being an elite endurance athlete, to completing my PhD in Nutritional Science, to finding a professional home in the food & nutrition research community, food and health have been central to my life. I have extended that full-circle with the goat micro-dairy my husband and I own and operate in central New Jersey.

Professionally, I have held positions as tenured faculty at the University of Hawaii and as director nutritional ingredient innovation within the food industry. Within both the academic sector and the industry sector, I have designed and managed clinical trials to study the effect of diet on health outcomes. My specific research areas include glycemic response to specialty carbohydrates, dietary fiber's impact on the gut microbiota, bioactive compounds and health, and micronutrient bioavailability. I have published more than 35 peer-reviewed articles based on my research, with a selection of publications listed below, and I am currently a contributing author to the monthly publication Environmental Nutrition. I look forward to contributing to the community at Saybrook University and enabling students to pursue their educational and professional goals.
